Annette's Potato Salad

My friend, Annette, had a birthday this month. Like myself, she is a collector of odd and interesting bits. Rather than add to her "stuff", I decided to make her a gift that wouldn't take up more space in her ever-growing collections. Food.

Annette loves edamame and horseradish, so I added these to a typical, traditional potato salad. I must say-- it was delicious!

So, Happy Day to Annette! Here's the "recipe" if you'd like to try it yourself.


First, I steamed the edamame in the microwave using my handy Pampered Chef Steamer for about 5 minutes.


I then boiled the potatoes in salted water until cooked through. Strained and set aside to cool.




Mixed up the ingredients listed above for the "dressing" mixture.


Add potatoes....



Delicious!!


Roasted Garlic Paste Tip:
I roast a head or three of garlic any time I make something in the oven. Just slice the top off, drizzle with olive oil, wrap in foil, roast for 20-40 minutes depending on your oven temp.
I make a paste by adding some coarse sea salt or kosher salt, then smash it with the side of my knife (thank you Food Network for that tip). Add it to any food you're making, or make an amazing spread for grilled bread.
